How do I change the email on my owner account?

You cannot edit the owner email directly. Transfer ownership to a new account instead. Create a second user account with the new email, invite that account from your existing owner account, set it as admin with full permissions, then transfer ownership to it. Log into the new owner account and remove the old account from the location. This is the same process used when ownership changes hands between people.
